Homemade Fish Fingers with Garlicky Mash
You can get lovely fresh fish from Ventnor Fisheries or just use any sustainably sourced white fish fillets.
Accompany with garlicky mash for a healthy, tasty family meal.
Serves 4
Ingredients
400g firm white fish fillets cut into fish finger size strips
4 tablespoons of plain flour
1 egg, whisked
2 pieces of stale bread
2 tablespoons of mixed seeds (sesame, pumpkin, sunflower)
Zest of one lemon
A tablespoon chopped parsley
400g potatoes, peeled
3 large garlic cloves, peeled
50g butter
A tablespoon chopped parsley & seasoning
Preheat the oven to 200C. To make the coating, place the bread and seeds in a food processor and pulse until you get a fine consistency. Add the lemon zest and parsley. Place the flour on a plate and coat each of the pieces of fish. Dunk each piece in the egg then roll in the bread and seed mix to give a good coating.
Place on a baking sheet and bake in the oven for 20 minutes until slightly browned and crispy.
In the meantime, boil the potatoes for 10 minutes then add the garlic cloves and continue to boil until the potatoes are soft. Drain and mash the potatoes and garlic with the butter then season to taste and add chopped parsley if desired.
Serve with peas and have fun arranging on your plates! Add some Garlic Farm Garlic Mayonnaise or Garlicky Tomato Ketchup for dunking if you’re feeling indulgent.
